Angel’s Chickpea Scramble


Try this recipe plain or switch things up by adding a splash of hot sauce or spoonful of salsa with a side of whole-grain toast or stuffed into a whole wheat pita.



  • 1 Tbsp oil
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1/2 large onion, diced
  • 1 (15 oz) can chickpeas, drained and mashed
  • 1 tsp turmeric powder
  • 1 tsp Italian seasoning
  • 1 tsp or more chili powder (optional)
  • 1 c. baby spinach



  1. Saute garlic, pepper, and onion in oil for about 5 minutes.
  2. Add chickpeas and seasonings and stir until well-combined and heated through.
  3. Add spinach and stir.

Serves: 2
