- 1 medium butternut squash, peeled and cubed
- 2 large, crisp apples, cored and diced
- 1 large red onion, diced
- 5-7 slices uncooked bacon, diced
- 2 Tbsp. scallions, finely chopped
- salt & pepper, to taste
Preheat oven to broil.
Spread squash evenly onto a cookie sheet lined with parchment paper.
Place under broiler for about 10-15 minutes.
Edges will char and squash will soften.
While squash is in the oven, heat a large skillet over medium heat then add bacon. Cook until crispy, then scoop onto a plate lined with paper towels to drain.
Remove all but 2 tablespoons of bacon grease from the skillet than add onion. Cook just until onion starts to soften.
Add roasted squash and apples to the skillet.
Season with salt and pepper. Gently stir once then let it cook until apples begin to soften. Do not over-stir.
Add the reserved bacon and scallions before serving.
