Crunchy Roasted Chickpeas

Photos and recipe from UofM Cooking Matters MN

The great thing about roasted chickpeas is that you can customize the flavor all you want! Like spicy? Douse them in hot sauce before the second “roast”. Prefer ranch flavor? Use a packet of ranch seasoning instead of the spices below. Find your favorite flavor and get roasting.

1 can chickpeas or garbanzo beans (drained and patted dry)
1 Tbsp. olive oil
1/2 tsp. smoked paprika
1/2 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. salt

1. Pour olive oil over chickpeas and stir gently to coat.
2. Spread evenly onto a baking sheet (set empty bowl aside) and bake for 20 minutes at 400 degrees.
3. Remove from the oven and pour the chickpeas back into the oily bowl.
4. In a separate small bowl, combine the seasonings. Sprinkle over the toasted chickpeas and stir.
5. Spread back onto baking sheet and return to oven for another 10 minutes or until browned & crunchy.
6. Let cool and start snackin’!
