Egg Muffins


Low carb and grab-n-go! Great to freeze and microwave when needed.


  • 12 Eggs
  • 1 Cup Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1 ½ cups sausage, ham, or bacon (your choice or leave out)
  • ½ cup onion
  • ½ cup green, red and/or yellow bell peppers
  • ¼ cup mayo with olive oil


1. Mix ingredients in a large mixing bowl.
2. Spray muffin tins or use cupcake liners.
3. Pour into muffin tins.
4. Bake at 375 degrees for 20-25 minutes.
