- 1/3 c. unsweetened applesauce
- 1/3 c. almond butter
- 1/2 c. cane or maple sugar
- 1 Tbsp ground flaxseeds
- 2 tsp. pure vanilla extract
- 1 1/3 c. oat flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 c. whole wheat pastry flour (or sorghum flour)
- 1/2 c. chocolate chips
Preheat oven to 350 degrees. Line 2 baking sheets with parchment. Set aside.
Beat applesauce, slmond butter, sugar, and flaxseed.
Add vanilla then mix in oat flour, baking soda, and salt.
Lastly add pastry flour and chocolate chips.
Drop onto pan in about 1 1/2 Tbsp scoops, then flatten slightly. (They won’t spread much during baking.)
Bake 8-10 minutes.
Let cool on rack 5 minutes, then transfer to wire rack.
