The perfect variation in place of ground beef!
- 1 c. red quinoa, rinsed
- 2 c. water
- 1 pkg. taco seasoning (or homemade version)
- romaine lettuce
- diced tomatoes
- sliced red onion
- shredded cheese
- diced avocado
- sour cream or plain Greek yogurt
- salad dressing of choice or salsa
- crushed tortilla chips
Combine quinoa, taco seasoning, and water in a Dutch Oven or heavy-bottomed, oven-safe pot.
Cover tightly with lid or foil and place in cold oven.
Turn heat up to 375 degrees and set the timer for 45 minutes. Check at that time and make sure it’s cooked through.
When done, fluff with fork and serve it on your salad.
