Be careful with this recipe…once you start eating it, it’s hard to stop!  Scoop it up with tortilla chips or use it to top off your tacos. A lot of options and a lot of yumminess! PRINT


  • 1 can black beans, rinsed and drained
  • 1 can whole kernel corn, rinsed and drained
  • 3/4 c. red onion, diced
  • 1 c. fresh tomatoes, diced
  • 1 c. sweet bell peppers, diced (green, red, and yellow)
  • 1-2 Tbsp. canned jalapeno peppers, finely minced
  • 2 Tbsp. fresh cilantro, finely chopped
  • 2-3 garlic cloves, minced
  • 1/2 c. lime juice
  • salt, to taste


Combine ingredients in a bowl and mix well.
Can serve immediately.
For best flavor, cover and refrigerate 6-12 hours.
