Vegan Vegetable Stir-Fry Sauce

This vegan stir-fry is so yummy!  It was served at one of our 2018 Wellness Lunches and the recipe was requested by several employees. 

 

Ingredients

For the sauce:

  • 3 c. tamari sauce
  • 2 c. water
  • 1 tsp. vegetable base
  • 1 c. pineapple, cubed
  • 1 c. orange juice
  • 1 tsp. ground ginger
  • 2 Tbsp garlic, chopped
  • 1 1/2 tsp. Chinese 5-Spice
  • 1 tsp crushed red pepper flakes

For thickening:

  • 2 Tbsp corn starch
  • 6 Tbsp cold water

 

Directions

  1. Combine the ingredients for the sauce in a large pot.
  2. Simmer for 45 minutes.
  3. In a separate bowl, combine the cornstarch and water.
  4. Add to the stir-fry mixture to thicken slightley.
  5. Serve with the vegetables of your choice.

TIP: Add toasted cashews for flavor and protein.
