Veggie Casserole



  • 8 thin sliced baby carrots
  • 3 thin sliced baking potatoes
  • 1 small head cauliflower, sliced or broken into small pieces
  • 1 large onion, sliced
  • 1 green pepper, sliced
  • 4 small zucchini, sliced
    (more ingredients listed below)


Layer veggies in a large baking dish, sprinkle each layer with Italian Seasoning (I use Mrs. Dash Garlic & Herb).

Bring to a boil:

  1. -1 can stewed tomatoes
    -1 cup vegetable bouillon
    -1/8 c. olive oil

    Pour boiled mixture over layered & seasoned veggies.

  2. Bake at 350 degrees for 1 1/2 hours.
  3. Top with grated Parmesan cheese and serve with salad and crusty bread.
